Apple Pancakes

6 eggs
1 1/2 cups milk
1 cup flour
3 Tbs sugar
1 tsp vanilla
1/2 tsp salt
1/4 tsp cinnamon
1/2 cup margarine
2 apples
5 Tbs brown sugar

Melt margarine in 9x13 inch pan at 425 degrees.  Make sure it doesn't burn.  Peel and thinly slice apples.  Place in melted margarine.  Return to oven until margarine sizzles.  Do not brown.  Mix eggs, milk, flour, sugar, vanilla, salt, and cinnamon.  Pour over apples and sprinkle with brown sugar.   Bake for 20 minutes or until done.

Cinnamon Pull-A-Parts

25 frozen Rhodes rolls
1/2 cup brown sugar
1 sm pkg cook and serve butterscotch pudding
1 tsp cinnamon(or more if you'd like)
1/2 cup margarine or butter-melted

Place frozen rolls in greased bundt pan.  Mix brown sugar, pudding mix, and cinnamon together and sprinkle over rolls.  Pour butter over top.  Allow to raise(overnight works best).  Bake for 30 minutes at 325 degrees.  Once cooked dump onto large cookie sheet or platter.  Best served warm.

Wheat Pancakes

1 1/2 cups milk-divided
1 cup wheat kernels
2 eggs
1/3 cup oil
3/4 tsp salt
1 T baking powder
2 tsp sugar

Directions:
Pour 1 cup milk and wheat into blender.  Blend on high for 3 minutes.  Add 1/2 cup milk and blend for 2 minutes.  Add remaining ingredients and blend until smooth.  Cook and eat like you would any other pancakes.

Granola

10 cups old fashioned oats
7 oz. coconut
1 cup wheat germ
1/3 -1/2 cup milled flax seed-optional
nuts-optional
dried fruit-optional
1 1/2 cups water
1 1/2 cups brown sugar
1 1/2 tsp salt
1 tbsp vanilla
1 cup oil
1/2 cup honey
1/2 cup molasses
cinnamon to taste
nutmeg to taste

Directions:
Mix oats, wheat germ, and coconut together in a large bowl.  Add milled flax seed and nuts if you choose.  In a sauce pan stir together all other ingredients except dried fruit and heat until sugar is dissolved.  Do not boil.  Pour onto oat mixture and stir coating all oats.  Spread onto two greased cookie sheets and bake for 15-20 minutes at 325 degrees.  Remove from oven and lightly stir.  Bake for another 15-20 minutes or until granola reaches desired level of crunchiness.  It will be a little crunchier after it cools.  Add dried fruit after granola is cool Serve with yogurt, eat for breakfast, or just eat as a snack to nibble on.  Enjoy!
