Granola

10 cups old fashioned oats
7 oz. coconut
1 cup wheat germ
1/3 -1/2 cup milled flax seed-optional
nuts-optional
dried fruit-optional
1 1/2 cups water
1 1/2 cups brown sugar
1 1/2 tsp salt
1 tbsp vanilla
1 cup oil
1/2 cup honey
1/2 cup molasses
cinnamon to taste
nutmeg to taste

Directions:
Mix oats, wheat germ, and coconut together in a large bowl.  Add milled flax seed and nuts if you choose.  In a sauce pan stir together all other ingredients except dried fruit and heat until sugar is dissolved.  Do not boil.  Pour onto oat mixture and stir coating all oats.  Spread onto two greased cookie sheets and bake for 15-20 minutes at 325 degrees.  Remove from oven and lightly stir.  Bake for another 15-20 minutes or until granola reaches desired level of crunchiness.  It will be a little crunchier after it cools.  Add dried fruit after granola is cool Serve with yogurt, eat for breakfast, or just eat as a snack to nibble on.  Enjoy!

We love this granola at our house. I used to eat it as a kid and one day called my mom for the recipe. There haven't been very many days when its not available at our house. Even the kids love it. I usually leave out the wheat germ and we have our nuts on the side.
