Beef Chimichangas

1 lb ground beef
1/2 cup finely chopped onion
1 can refried beans
2/3 cup salsa
1 1/2 tsp chili powder
2 cloves garlic-minced
1/2 tsp ground cumin
1 1/2 cups cheddar cheese-shredded
flour tortillas
2 Tbs butter-melted

In a skillet brown beef and drain.  Stir in onions and beans, salsa, chili powder, garlic, and cumin.   Place about 1/2 cup of mixture onto tortillas.  Fold and place seam side down on baking sheet.  Brush with butter.  Bake at 375 degrees for 25-30 minutes.  Serve with sour cream and guacamole.

These may be frozen prior to baking in a freezer container.  Thaw in refrigerator prior to baking.

This is similar to the chicken chimichangas. I use the refried beans from the cannery. These taste the same once frozen too. Sometimes we have enchilada sauce on top to spice it up a little.
